Healthy recipe: Roasted chickpea salad

Alright, guys..after making this one you can check ‘make the easiest salad ever’ off your To-do list. Easy, healthy and delicious chickpea salad coming at ya!


You will need:

Roasted chickpeas Put the chickpeas (you can use canned chickpeas OR, much better, cook your own chickpeas) in a bowl and mix them with some extra virgin olive oil and (celtic) sea salt. Spread them on a baking sheet (see below) and bake them in a pre-heated oven for about 10 minutes on the highest temperature to make them extra crunchy.

(Roasted chickpeas are also a great snack on their own. You can marinade them with all different types of spices and, for example, honey instead of olive oil.)


Half cucumber
2 Paprikas
2 cups of white grapes
Cilantro
 3 Tomatoes
Raw leafy greens of your choice
(I’ve used a rocket ,lettuce and baby spinach salad blend.)

For the dressing you will need: good quality extra virgin olive oil, lime juice and freshly ground black pepper.

Chop all the ingredients, put them in a bowl with the delicious and crunchy roasted chickpeas and top off with the dressing. Finito!
You can add some mint or parsley, or millet, (gluten free) couscous, quinoa etc. etc. to make the salad a lil’ bit ‘richer’.
